Ingredients:

1/2 onion diced finely 2-3 slices of ham 250g grated Lincolnshire Poacher Cheese 1/2 loaf (ish) buttered crustless sliced white bread 1 1/2 pints of whole mik 6 large eggs salt & pepper

This is a delicious and very simple supper dish that can be rustled up very quickly and was first done by celebrity chef James Martin on his cookery programme a couple of years ago. If you do try it, let us know how you get on with it.

Method:

Line the bottom of a shallow ovenproof dish with several slices of the buttered bread. Cover with a generous amount of cheese and ham. Place rest of bread on top.
Heat milk and onion in a pan with salt and pepper to taste, pour mixture over beaten eggs and mix thoroughly. Then pour milk and egg mix over the bread in the dish and place in a pre-heated oven at 180 degrees C for 25 minutes.
Take out of oven and sprinkle rest of cheese over the top. Cook for a further 10 minutes or until golden brown.
Delicious served with some lightly dressed salad leaves.
Lots of other things go well in the dish such as mushrooms, bacon, red pepper, celery etc
